All proceeds are donated to the Brandon Michael Thomas Culinary Arts Memorial Scholarship at MCC. In his memory, his family created this scholarship and underwrote the printing for the cookbook. Recipes in the cookbook are categorized under the four seasons of the year and include appetizers, main meals and desserts. Some of the recipes include photographs and instructions to prepare the dish. Compiling the cookbook was a learning experience for the students who created, tested and photographed the dishes. The cookbook showcases the Sage Student Bistro and all of the talented people who work at The Institute for Culinary Arts.
Brandon was a student at The Institute for the Culinary Arts. He was 21-years-old and a few credits shy of completing his culinary degree when he was fatally injured in a traffic accident in 2010.
Born in Boston and a graduate of Omaha’s Millard North High School, Brandon had a zest for life and a deep passion for food and cooking. As a child, he loved to help in the kitchen and for year’s served as the head chef for his family’s annual Thanksgiving feasts. He worked in several Omaha restaurants and was among the most promising students in his culinary classes. He was beloved by instructors and students alike for his lively sense of humor and early grasp of both the big picture and the finer points of cooking.
